cream cheese sugar cookies & cream cheese frosting

  • for the cookies:
  • 3 oz cream cheese, softened
  • 1 cup butter, softened
  • 1 cup sugar
  • 1 egg
  • 1 tablespoon lemon juice
  • 2½ cups flour
  • 1 teaspoon baking powder
  • for frosting:
  • ½ cup (1 stick) butter, softened
  • 8 oz cream cheese, softened
  • 2 teaspoons lemon juice
  • 2 lbs powdered sugar
  • topping:
  • crushed candy canes or chopped nuts
  1. for the cookies:
  2. beat cream cheese, butter, and sugar until smooth. add egg and lemon juice and combine. mix in baking powder and flour. use a small (2 tablespoon) cookie scoop to place on a parchment-lined baking sheet. cookies with only flatten slightly, but you can use the bottom of a flat glass or spatula to flatten the cookies before baking if you want them smooth and flat. bake at 350 for 10-12 minutes. cool on a cooling rack and then transfer to the freezer for a few minutes before icing.
  3. for the frosting:
  4. beat together the butter, cream cheese, lemon juice and half of the powdered sugar until you reach a smooth consistency. add more powdered sugar 1 cup at a time until you get a thick but spreadable icing.
  5. eat as is, or sprinkle on chopped nuts or crushed candy canes! enjoy!
