freezer meal :: easy beef lasagna

  • 1 pound ground beef
  • 3 cups marinara sauce
  • 16 oz cottage cheese
  • 1 egg
  • oven ready lasagna noodles (or use regular lasagna noodles and boil as per directed on the package)
  • mozzarella cheese, grated


  1. in a large skillet, brown the ground beef. add marinara sauce and stir to combine. set aside.
  2. combine the cottage cheese and egg and stir to incorporate the egg. set aside.
  3. in a 9″x13″ baking dish (aluminum, if you plan on freezing it) layer the following ::
  4. cup of meat sauce
  5. lasagna noodles
  6. half of remaining meat sauce
  7. lasagna noodles
  8. cottage cheese and egg mixture
  9. lasagna noodles
  10. remaining meat sauce
  11. shredded mozzarella cheese
  12. bake in a 350 degree oven for 40-45 minutes, or until cheese is golden and bubbly. let rest for 5-10 minutes for perfectly cut squares.
  13. freezer instructions ::
  14. prepare as directed, but do not bake. cover with foil and place it in the freezer.
  15. place in the fridge, to thaw, the night before you plan on eating it. bake as per regular instructions
  16. OR
  17. if the lasagna is frozen, turn up the heat to 375 degrees and bake for 1.5 hours, or until heated through.
