yummy cheesy artichoke dip

hot artichoke dip recipe - cheesy, creamy, and dreamy!

dips are a way of life around my house. aside from the obvious ketchup for everything, my kids like to dip their fruit in yogurt or in an otherwise yummy fruit dip. i like to eat my apples with caramel apple dip – it’s a serious addiction of mine. and while i love me some homemade salsa to eat with tortilla chips, what i really, really love is some cheesy, gooey, glorious artichoke dip, hot out of the oven! aside from grating some cheese and chopping up some canned artichokes, it really is just a dump, mix, bake kind of a recipe. crack open a bag of tortilla chips and you’ve got a party!

the only things you need to make this amazing hot artichoke dip is a can of artichoke hearts, a can of diced green chilies, a bit of mayo, some cream cheese, and some grated parmesan and mozzarella.

first things first – drain the canned artichoke hearts and chop them up. place them in a medium-sized mixing bowl. (use a bowl that will fit all the ingredients and give you enough room to stir everything together without spilling food everywhere. in other words, don’t be like me.)

add the cream cheese – you want to make sure it is very soft.

next, add the mayo and green chilies.

add the parmesan and mozzarella cheeses and stir to everything together to combine.

super simple hot artichoke dip

i grated a bunch of mozzarella cheese, so i added sprinkled some more on top of the dip before putting it in the oven. but this is not necessary. there is plenty of cheesy goodness in there without!

all you have left to do it to pop it in the oven! how easy was that?! i like it to have brown spots on the top so once it was all hot and bubbly i put it under the broiler for a minute or two.

this artichoke dip is so, so good, people! i wish you could grab and taste a chip-ful of it right now through the computer screen. since it’s already been a few days since i took these pictures, i’m thinking it’s time to make it again! i’ll have to have people over just to justify making more! try it tonight for your family to enjoy, or save the recipe for your next party or get together. i have a feeling everyone’s gonna love it!

Ingredients
  • 1 14oz can artichoke hearts, drained and chopped
  • 1 small can chopped green chilies, drained
  • 1 8oz block cream cheese, softened
  • ⅓ cup mayo
  • 1½ cups mozzarella cheese, grated
  • ¼ cup parmesan cheese, grated
Instructions
  1. mix all of the ingredients together in a bowl. pour into a glass pie plate and bake at 350 for 25 minutes. (broil for an extra 1-2 minutes, watching carefully, until it begins to brown on top, if desired.) serve with tortilla chips or crackers. yum!

    Could this be made by omitting the mayo? For some reason I can’t stand mayo – I’m wondering if could be replaced by something and still maintain the taste and consistency?

      hmm…i’m not sure! maybe cottage cheese? sorry, i’ve always used mayo and haven’t tried anything else.

      Plain yogurt can be substituted for mayo.

    Hi! At my store all the cans of artichoke hearts are about 16 oz, I can’t find one that is 4 oz…. is 4oz correct or maybe meant to be 14 oz? I can cut the can into fours to get 4 oz but I’m just trying to make sure I don’t over do it hahaha thanks!

      Yes, you are right! A typo for sure! It should be 14 oz!! But if you use 16 oz, I’m sure it would work out great too. Thanks for pointing that out to me! I’m so sorry – I will fix that right now! 🙂
